Sloppy Joe Spaghetti

This is sure to be a healthy meal the whole family will enjoy. Another great thing about it is its cheap and tastes better as each day passes. You can experiment with what you want to add to it. I made this a little sweeter, but you can certainly spice it up as well!



Ingredients:

- 1 large spaghetti squash
- 1 pound ground turkey breast 7% fat or less
- 1 cup sweet red onion, diced
- 1/2 cup green pepper, diced
- 1/2 cup red pepper, diced
-1/4 cup cucumber, diced
- 3 cloves garlic, minced
- 1/4 cup natural/organic ketchup (low sugar)
- 8 oz can no-salt added tomato sauce
- 1 Tbsp natural BBQ sauce  (low sugar)
- 2 -3 packets Stevia depending on how sweet you want it.  
- Sea salt - optional








Directions:
  • Preheat Oven to 350 degrees
  • Cut the spaghetti squash in half and put both halves face down on a baking sheet. Bake for 45 minutes or until you can easily slice a knife through the skin of the squash. 
  • While the squash is baking - combine onion, ground turkey, garlic, and peppers in a large skillet and cook until turkey is no longer pink.
  • Then add ketchup, tomato sauce, BBQ sauce and stevia to the skillet. Allow it to cook for 5 minutes longer. 
  • Once the squash is fully cooked use fork to scoop out all the seeds and toss those. The squash will be very hot, so use an oven mitt.  
  • Using a fork carve out all the squash and throw away the skin. The squash will come out in strands like spaghetti!
  • Top the cooked squash with the sloppy joe mixture and enjoy!
