Nutty Nana Bread

I threw these ingredients in my high power mixer and was pleasantly surprised at the result. I wanted something that was a little sweet but also packed with protein and healthy fats. I like to top mine with a drizzle of honey or agave nectar. Yum-o, enjoy!

Ingredients:

1 ½ ripe bananas (approximately 1 cup mashed)
1/3 cup egg whites
½ cup greek yogurt (2%)
2 ½ tbsp coconut oil
2 ½ tbsp natural peanut butter (no salt or added sugar)
1 tsp vanilla extract
1 cup quinoa flour
½ cup whole wheat flour
1 tsp baking soda
1 tsp kosher salt

Optional Toppings:
½ tbsp cinnamon
¼ cup oats
Agave Nectar

Directions:


1.       Preheat oven to 350 degrees.
2.       Add the first 6 ingredients together and blend.
3.       Add in remaining ingredients and blend until medium               consistency
4.       Pour batter into greased loaf pan
5.       Top with cinnamon and oats (optional)
6.       Bake for 50-60 minutes or until you can stick toothpick in the center and it comes out clean. Should be golden brown in color.
7.       Then slice into 12 pieces I like to top mine with a drizzle of agave nectar and enjoy as a clean ingredient dessert.
